Hotteok (sweet filled pancake)
Street snacks
A yeasted wheat dough wrapped around a brown sugar and cinnamon filling, then pressed flat and fried in plenty of oil on a griddle. It is a winter street stall snack, and the filling often has chopped nuts or seeds.
Why this list cannot be complete
Many Korean restaurants are franchises whose recipes are not published, and shops create their own versions of the same dish. A menu name often does not tell you what is inside. This page covers the traditional recipe and the variations that have spread widely, not every shop.
The filling changes a lot from stall to stall: plain sugar, sugar with nuts, a seed and nut mix, honey, or glass noodles and vegetables.

The pancake itself is a wheat flour dough, often mixed with some glutinous rice flour, and ready-made hotteok mixes used by many cooks are wheat based too.
Some doughs are kneaded with milk instead of water, while others use only water, so it depends on the stall; pizza hotteok is filled with cheese.
Most hotteok stalls put chopped peanuts, the cheapest nut, into the sugar filling, and seed hotteok mixes contain them too; they sit in the melted syrup and are hard to pick out.
Walnuts are used in place of or together with peanuts in the sugar filling, and they appear in seed hotteok mixes.
Nut-filled versions can also include almonds or pecans mixed with pumpkin and sunflower seeds, so ask which nuts are in the filling.
Sesame seeds are sometimes stirred into the sugar filling, and the glass noodle filling of vegetable hotteok is seasoned with sesame oil and sesame seeds.
The savory glass noodle and vegetable filling is seasoned with soy sauce; the sweet sugar filling is not.
Some glass noodle hotteok fillings include sliced shiitake mushrooms along with carrot and spinach.
Some savory vegetable hotteok mix diced ham into the glass-noodle filling.
Pizza hotteok swaps the sugar for tomato sauce, vegetables and cheese.
